
Nope, I’ve never kept paleo – have never even tried! But, like the rest of America, I struggle with my gut health. So when I can find a “healthier” substitute for something I love but that my stomach can’t handle, I’m all over it. These cookies are SO OUTRAGEOUS that I like them even more than your typical chocolate chip cookie. Seriously though…they’re psychotic.
So many people are on the new year’s resolution train so I thought, no better time than now to share one of my favorite “healthy” recipes of all time with you. I suffer from all sorts of gut issues, so while I was never a total health freak, somehow it’s become part of my lifestyle to be super conscious of what goes into my body. If I don’t, I suffer the consequences! So I came across these cookies in search of a sweet treat that wouldn’t upset my stomach the way a lot of processed foods do, and there it was!
Super easy & quick to make, with just a few ingredients…NONE of which include butter, eggs, dairy, gluten or processed sugar. Yet they somehow come out ooey, gooey, and the most addicting sweet I’ve ever had. I love them so much I prefer them over the bad stuff! It’s no wonder this blogger, Lauren from Oatmeal with a Fork, named them “The Best Paleo Chocolate Chip Cookies Ever.” I’d even go further and say without a doubt they’re just the best cookies ever, period. *NOTE* I don’t use cinnamon and have always used honey (rather than syrup). I also double the recipe to get about 12-15 because one batch doesn’t make much. I also found dairy-free chocolate chips at Whole Foods to make it totally paleo!
